This Snowball Cookie Will Become Your Favorite Christmas Recipe

How many times this holiday season have you collected recipes and planned to bake a variety of awesome cookies to have it in your home and gift it to friends and family? For many of us, that’s a very tall order and we just end up heading to the store to buy a few trays of Christmas cookies and be done with it. It’s easier and they are delicious.

The only problem with store bought cookies is that it lacks that homemade feel, the smell of them baking in the oven and all the good feelings that come with it. If you have about 30 minutes to spare, we urge you to make this cookie. It’s so easy even a 5-year-old can make it and the results, we promise you, are heavenly. Just try not to eat them all in one sitting and leave some for others to try these little pieces of paradise.

These cookies are known by many names – Mexican Wedding Cookies, Russian Wedding Cakes, Russian Tea Cakes and Butterballs. We like to call them Snowballs. Their buttery texture will melt in your mouth, just like snow!

Little tip: If you want to make these cookies a bit healthier, substitute butter for coconut oil. It tastes even better!

Here’s What you’ll need: 

1 Cup Softened Butter (or Coconut Oil)

½ Cup Sifted Powdered Sugar, Plus 2 Cups To Roll In The Cookie

1 Tsp Vanilla Extract

2 ¼ Cups of All Purpose Flour

Pinch of Salt

¾ Cup Finely Chopped Walnuts

How To Make It

    • Preheat Oven to 400°.
    • In a medium bowl, combine flour, salt and walnuts and set aside. 
    • Cream butter, sugar and vanilla extract.
    • Stir in remaining ingredients until well combined.
    • Roll it into small balls and roll it in powdered sugar.
    • Bake it for 10-12 minutes. Do not overbake.
    • While the cookies are still hot, roll them in powdered sugar and place them on a cooling rack.
    • After they have cooled, roll them again through the powdered sugar. The first sugar coating will melt and stick to the cookie and the second will add a nice finish to them.
