We all know the feeling. We buy a bunch of green bananas, hoping they ripen soon and forget all about them. Next thing we know, they are almost overripe. Not ripe enough to make banana bread, but a bit too mushy to slice it and eat it with your cereal.
Kristen King from dizzybusyandhungry.com came up with a great idea for those bananas in limbo that is healthy, easy to make and naturally delicious.
It works great as a healthy snack all by itself, but there are many options to use it as a topping (pancakes, anyone?) or to accompany it with some vanilla ice cream.
Here’s the recipe:
What You’ll Need:
- 2 slightly overripe bananas
- 2 tablespoons sugar (you can substitute granulated Splenda, if you like)
- 1 teaspoon cinnamon
- ¼ teaspoon nutmeg
- cooking Spray
How To Make It:
- Cut the bananas into 1/3 inch thick slices.
- Mix together the sugar, cinnamon and nutmeg in a small bow and set aside.
- Spray a skillet with the cooking spray and cook the banana rounds on low-medium heat for about 3 minutes.
- During the last minute of cooking on the first side, sprinkle about ½ of the cinnamon mix over the banana rounds.
- Flip the rounds, sprinkle with the remaining cinnamon mixture, and cook about 2-3 more minutes, until the bananas are soft and warmed through.
